I normally make chocolate or peanut butter fudge with this quick and easy recipe. I decided to try butterscotch chips instead of chocolate chips or peanut butter chips for a different type of fudge.
Making the Quick and Easy Homemade Butterscotch Fudge in a College Dorm Room
One good thing about this quick and easy homemade fudge recipe is students who are living in a dorm can make this fudge without breaking any of the dorm rules on cooking in their rooms. I bring this up because most dorms allow microwaves and dorm size refrigerators.
Since hot plates aren’t allowed in most dorms around the country because of possible fire hazards, using this homemade fudge recipe is so fast, it can be made before or in between classes if you have a long break.
As a college student, you may be able to talk mom out of a spare microwaveable bowl, spatula, can opener, square pan (glass or metal), measuring spoons and dry measuring cups. If not try, many of the items needed for this fudge recipe can be the store brands rather than the name brand products.
The utensils, bowl, and square pan can be bought at most dollar stores cheaper than at Wal-Mart. Those items can be used for other quick and easy microwave foods. You could also try a local thrift shop before going to a dollar store for the cooking utensils and dishes.
Materials Needed for the Quick and Easy Homemade Butterscotch Fudge
2 – 11 ounce packages of Nestle’s or store brand of Butterscotch chips
1 – 14 ounce can of sweetened condensed milk
Vanilla extract (pure or vanilla flavored)
8×8 inch square baking dish (glass or metal – the metal pan can be nonstick or the aluminum kind)
2 quart microwavable bowl
1 cup measuring cup
Teaspoon measuring spoon
Stick of butter or butter flavored spray, like Pam
Peanut Butter Chips (Don’t use if there is a known allergy to nuts)
NOTE: The same amount of chips will be used if you are using one of the chip substitutions.
Extra Tips for Making Different Variations of the Quick and Easy Homemade Fudge Recipe
TIP: Caramel chips didn’t work at all for me when I tried to add a melted layer between the chocolate and peanut butter layers at one time. I would suggest avoiding those. I haven’t tried it since with any other version of caramel.
TIP: If you like nuts in your fudge and making this in your dorm room, get the minced or chopped nuts. This will save you some time and clean up. After all this is a quick and easy fudge recipe. The amount of nuts added to the quick and easy fudge recipe will depend on how many nuts you want in it.
Directions for Making the Quick and Easy Homemade Microwave Butterscotch Fudge
3 cups of Butterscotch Chips
1 can of sweetened condensed milk
1 tsp of vanilla extract
Measure 3 cups of the butterscotch chips into the microwaveable bowl. Open and empty the sweetened condensed milk into the bowl with the butterscotch chips.
Spray or smear butter along the sides and bottom of the 8×8 square pan. Set aside.
Place the mixture into the microwave for 1 minute on high. Remove and stir.
Place the mixture back in the microwave for 30 seconds; remove and stir. Continue this step until chips are melted and mixture is smooth when stirred.
NOTE: A 800 watt or lower wattage microwave may take several times to melt the chips.
Add 1 teaspoon vanilla extract and stir. Pour the butterscotch mixture into the 8×8 square pan. Be sure to scrape bowl and put excess in with the rest of the butterscotch mixture and smooth out.
Place in the refrigerator for minimum of 2 hours. If you are using a dorm room size refrigerator, the quick and easy homemade butterscotch fudge may take longer than 2 hours to set up.
