Casserole dishes are so easy to prepare and everybody always loves them especially around Thanksgiving and Christmas time. Every year I make a Sweet Potato Casserole with Marshmallows on top that is always a huge hit. Below is that sweet potato casserole recipe.
Sweet Potato Casserole with Marshmallows
1/2 cup of butter or margarine
2 (16 oz) cans of sweet potatoes or yams (drain them)
1/2 cup milk
2 tablespoons of packed brown sugar
2 tablespoons of molasses
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Dash of cloves
1 cup of miniature marshmallows
Heat butter in a 1 1/2 quart casserole dish in the microwave on high for 1 minute – 1 min 30 seconds or until melted. Combine melted butter, sweet potatoes, egg, milk, sugar. molasses, cinnamon, nutmeg and cloves; mash until smooth. Spread into the same casserole dish. Cover with plastic wrap. Cook at high for 8 – 9 minutes or until heated through. Top with marshmallows then cook on high uncovered for 30 seconds.
*Variation* Add a can of pineapple chunks to this recipe. Drain the liquid out first and pour the pineapple chunks into the bottom of the casserole dish.
