Homemade beef stew is easy to make in your crock pot or slow cooker. The crock pot stews the beef to make it tender and adds a lot of flavor. This recipe for beef stew will become a favorite.
1 1/2 to 2 lbs. stew beef (either chuck or London broil works well)
1 tablespoon flour
1- 14 oz. can tomato sauce
1 small onion – chopped fine
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon salt
4 medium carrots
3 stalks celery
4 medium potatoes
Cube beef into 1/2″ pieces.
Start to brown the beef in the crock pot on high. If your crock pot is not non-stick, add 1/2 tablespoon of oil. Allow this to brown for at least 30 minutes. While it is browning you can prepare the vegetables.
Peel the carrots and slice into circles. Make them somewhat thick. Wash the celery and chop into pieces about the same thickness as the carrots. Set aside in a bowl.
Add minced onion and paprika to the stew meat.
Peel the potatoes and cube them. Set aside in a bowl of water.
Check the beef and it should be tender and starting to soften. Add the tomato sauce and 1 can of water to the stew.
Add all the vegetables, salt and pepper and stir together. Lid the crock pot and allow to cook on low to medium.
Check stew in 1 hour and if vegetables are to desired tenderness, it is time to thicken the gravy. In a small jar, add the flour. Scoop out 1 ladle full of gravy from the stew. Put the lid on the jar and shake well. Slowly pour into the stew, stirring well.
Turn off the heat on the stew. Gravy will thicken. Stew is ready to serve! Makes 4 generous servings. Excellent with warm bread or rolls.
