Preparation of Safeway Select Chicken Enchiladas takes little amount of effort. After removing the tray from the outer packaging, the corners of the aluminum lid get lifted up to allow the food to vent while baking. The tray of chicken enchiladas gets placed on the center rack of the oven and allowed to cook for one hour and fifteen minutes. After that period of time, the lid gets removed and the meal continues to cook for approximately ten minutes. After removing the tray from the oven, the food is allowed to stand for two minutes before serving.

Overall, I was very impressed with Safeway Select Chicken Enchiladas. Each wrapped enchilada was bursting with chicken, cheddar and Colby cheese and drizzled nicely with Poblano sauce. The Spanish rice served with the enchiladas was very filling and tasty. I added a bit of Salsa Verde to my meal and my daughter dipped her chicken enchiladas in taco sauce. A few handfuls of Mexican style cheese can also be added to the top of the enchiladas in the last few minutes of baking for an even cheesier meal. I wouldn’t hesitate to serve these enchiladas as part of a party buffet, or for a Super Bowl party. I will definitely be purchasing Safeway Select Chicken Enchiladas again.
