Whoever tells you that you can’t do what you’d like to do only need look at Betsy Devine to see that anything is possible. Devine with her partner Rachel Mark sure have made their mark on the culinary scene in Brooklyn and beyond. Their Salvatore Bklyn Whole Milk Ricotta and Smoked Ricotta cheeses have made quite an impression ever since Devine first put her ingredients together, the hungry masses have been lapping them up.
According to Brooklyn Paper (1) Devine began making ricotta cheese at night for private packaging as she slaved away during business hours at the restaurant she was employed in, Lunetta. While it is something of an aberrant process for cultivating something original, Devine has taken her the lemons life has given her (or whole milk) and made sweet, sweet ricotta cheese!
Devine has since opened up her own space in Clinton Hill and now sells her cheese to shops and restaurants all over the city. Betsy Devine has become the face for Salvatore Bklyn and was even seen on The Martha Stewart Show (3) in August making her “mouthwatering pancakes using ricotta cheese.”
