Sauces #6 – Tomato Sauce
Tomato Sauce – a sauce that is primarily from the tomato
Commonly known as Pasta Sauce
Types: Marinara Sauce
The tomato has a rich flavor and is easily broken down to the thickens desired. Is also called the “Grand Sauce” as it is the foundation of a variety of sauces.
The tomato sauce usually is served as part of the dish rather than as a condiment. The most common use is for a pasta dish but there are a variety of dishes that the tomato sauce can be used for. A good tomato foundation goes wonderful with chicken, fish, or can be made into a salsa for dipping. You can keep it simple by adding just a few extras like onion, basil and garlic or you can spice it up with meats like sausage or beef, or vegetables. How ever you fix this sauce the flavor of the tomato is delicious.
First we will start with a basic tomato-based sauce.
Basic Tomato Sauce
2 lb medium tomatoes finely chopped
1 oz butter
½ teaspoon sugar
salt and pepper to taste
Step 1: Melt the butter in a large saucepan over a low heat.
Step 2: Add the tomatoes and stir
Step 3: Cover and cook slowly for about 5 minutes
Step 4: Stir in the sugar
Step 5: Partially uncover the pan and cook until the sauce has thickened and the tomatoes are soft. This will be about 30 minutes.
Step 6: Add the salt and pepper to taste.
Step 7: Strain the sauce to remove the tomato peal and seeds. Note: If you are making a salsa you do not have to strain.
If you are not using immediately this can be stored in the refrigerator or frozen.
After you have the basic sauce down it is time to spice it up a little. When you are going use the above sauce you can add the following spices. Just add the spice as it is warming. By the time it is heated the spices will be blended in.
By slowly warming the sauce you can add texture by finely chopping and mixing in the following.
And there is always the meats that can be added. Just brown the meat and add to the warm basic sauce.
Do not be afraid to experiment with this sauce. Try different combinations of things until you find the one that your family likes best.
