Sweet potatoes are among the healthiest and most nutrient-rich foods you can eat. Luckily they are also absolutely delicious. I try to work sweet potatoes into a meal at least once a week (often more, because I love them so much), and they can be prepared in a variety of ways, both savory and sweet. One of my favorite sweet potato recipes-seasoned sweet potato wedges-is also one of the fastest and easiest ways to prepare the vegetable. You can play around with this sweet potato wedge recipe as much as you want to find the flavor you like best.
Seasoned Sweet Potato Wedges-Ingredients
2 large sweet potatoes cut into thick wedges (you can keep the skin on, just scrub them well)
¼ cup (approx.) Extra virgin olive oil
¼ tsp. cayenne pepper
¼ tsp. paprika
½ tsp. dried oregano
Salt and black pepper to taste
Seasoned Sweet Potato Wedges-Preparation
Preheat your oven to 400°. Pour olive oil into a large freezer bag (trust me here) and add all of your spices. Throw in your sweet potato wedges and close the bag tightly. Shake the bag up until the sweet potato wedges are completely coated, and then spread them out onto a baking sheet. Bake the wedges for about 30-40 minutes, turning them over halfway through, until they are crispy.
Seasoned Sweet Potato Wedges-Serving Suggestions
Seasoned sweet potato wedges make a perfect side dish for a number of meals, both casual and fine. Pair them with sandwiches, soups or grilled hot dogs or burgers. You can also make them as a side for fish dishes, pork chops, chicken breast or steaks. Substitute sweet potato wedges for regular French fries whenever you can.
If you prefer a sweeter side, add some honey, sugar or cinnamon to your olive oil before you bake the sweet potato wedges, and leave out the cayenne pepper, herbs and paprika.
