The nights are drawing in, the temperatures are falling and the ground is covered with leaves! This could mean just one thing, Old man winter is almost here, but there is a way you can beat the cold and have a hearty meal at the same time! Stew is a staple of my households diet around this time of year! We absolutely love it! It is perfect for the whole family and it ensures your kids are getting their fill of veggies.
I have been eating stew my whole life, especially growing up in England, where the winters were incredibly harsh! I used to look forward to that time of year just because of the delicious Stew! I have had many different stews over the years, made by many different people, and one thing i have learnt is that the secret to making a great stew is to keep it simple.. No fancy ingredients, no fancy cooking methods, just simple, hearty foods. My stew is very simple and very easy to make, you can prepare it in the morning, go to work then when you return it will be waiting for you. This is what you will need
1lb of lean stew meat
1lb of Carrots
5 or 6 six medium Potatoes
4 small cans of Tomato sauce
1 can condensed Tomato soup
1 can of Sweetcorn
2 sticks of Celery
Salt and Pepper to taste
Chop up the Onion and dice, place the onion and stew meat into a skillet and cook until the meat has browned. The onion will give amazing flavor to the meat.
Wash, peel and chop your Carrots and Potatoes and Celery. It does not matter what size, you can do this to your liking, I like my Carrots and Potatoes chunky.
Open the 4 cans of tomato sauce and pour them into the Crockpot, then fill each small can with water and pour the water into the Crockpot too. Add the can of condensed Tomato soup to the Crockpot too. Mix in the Potatoes, carrots, celery and sweetcorn (drain water from can), and the meat and the onion. Add Salt and Pepper to taste and give everything a good mix. Cover the Crockpot with the lid and set to cook on low for at least 6 hours.
When you get home from work, be prepared to smell that great stew as you walk in the door! It will be ready to serve the minute you get home! I hope you enjoy this as much as my family does.
