Thinking of s’mores might conjure up images of campfires and summer evenings. However, s’mores are a great treat any time of year. Yes, s’mores are delicious but they’re also messy. Little kids, in particular, can find it difficult to eat a whole s’mores, but if they do, they usually end up with half of it all over them. You can make a much more appropriate batch of s’mores that will work better for serving to young kids.
Craft stores and places that sell cooking and baking supplies have a nice selection of handles for suckers and similar things. These are just what you need to make s’mores on a stick for kids and adults alike. Purchase ordinary craft sticks, known as popsicle sticks, or buy the type that is made for suckers. If you buy sucker sticks purchase the ones that are hard plastic rather than ones made of paper.
Use regular marshmallows to begin the s’mores. Push a popsicle or sucker stick into each marshmallow. Don’t push the stick all the way through but push it in until it’s very near the bottom. After all the marshmallows have their sticks set them aside while you prepare the chocolate.
A 12oz package of chocolate chips makes about a dozen s’mores so, if needed, double the amount of chocolate chips you use. Place the chips in a glass measuring cup or bowl and melt in the microwave. Stir frequently and remove them as soon as they are all melted.
Instead of the microwave you can melt the chips on the stove top. When using this method it’s important that you stir constantly and remove from the heat as soon as all the chips have melted. Since melting chocolate on a burner can result in a slight scorched taste it’s even better if you use a double-boiler. Fill one pan half full with water and bring it to a boil. Set a second pan on top of that one and place the chocolate chips in it. Allow the boiling water to melt the chocolate.
Take each marshmallow on a stick and dip it in the chocolate. Swirl it around until it is completely covered in chocolate. It’s best to add the graham crackers to each marshmallow before moving on to the next since the chocolate can set up quickly. Either have a bowl filled with graham cracker crumbs, and dip the chocolate marshmallow, or hold the marshmallow over a tray and sprinkle the graham crackers on it. There’s no need to refrigerate the s’mores; you can serve them right away.
