As a writer who focuses in on the symbolism to be found in horror movies, I have found that alcohol consumption in horror movies has become so regular that many people have missed the basic points of symbolism that are being relayed by the director.
Alcohol Removes Inhibitions
How many times have we seen a character in a horror movie try to use alcohol to remove the inhibitions of a young lady? How easily we forget that the lowering of inhibitions has been considered as a sin in the Church for centuries. The lowering of inhibitions allows a character to partake in the Seven Deadly Sins. This usually becomes the precursor to actual death in horror movies.
Alcohol is Against the Will of Parents
Usually, in horror movies, alcohol consumption is partaken by underage characters that want to be free of the influence of their parents. Since drunk people usually die quickly in horror movies, alcohol consumption symbolizes the steps toward the dire circumstances that can follow not listening to our parents.

I do not have to point out the fact that there are many people that die every year in crashes or accidents that had alcohol consumption as a catalyst. So to in horror movies, alcohol consumption is the step right before a gruesome death that might have been prevented if a person had either stayed sober, or known when to stop drinking.

There are many cases in which characters have been killed after alcohol consumption that might have had a chance to live if they had not been incoherent. Alcohol consumption slows our reflexes, and blurs our minds. So to in the actions an reactions of characters in horror movies. Remember, the ones left alive at the end of horror movies are usually completely sober.
Keep these point in mind the next time that you see alcohol consumption in horror movies. Try to think about what point the director is trying to get across about alcohol. Not only is it an easy plot device, but it is an easy message to get across to those that pay attention to the reasoning.
