Thanksgiving mornings can be hectic depending on how many people you need to cook dinner for that night. This recipe is simple to make and tastes delicious and perfect for Holiday mornings.
Thanksgiving Breakfast Casserole
1 pound sausage, browned
1 package crescent rolls
1 cup home fried potatoes
1 cup shredded cheddar cheese
1/2 cup shredded cheddar cheese for topping
1 onion, finely chopped
1 green pepper, finely chopped
1 tomato, diced
5 eggs, beaten
1/4 cup milk
1/2 tsp salt
Saute the onions and green peppers until just tender. Set aside in a bowl.
Brown the sausage. Drain and set aside.
While the sausage is browning, mix together the eggs, milk and salt. Set aside.
Preheat the oven to 350 degrees.
Unroll the crescent rolls and lay flat on the bottom of a greased 9×13 casserole dish.
Add the browned sausage on top of the crescent rolls.
Add the home fries on top of the sausage.
Add the onions and green peppers. Add the diced tomatoes.
Sprinkle 1 cup of shredded cheese on top.
Pour the egg mixture over the top of the shredded cheese.
Sprinkle the 1/2 cup of cheese on top.
Bake for 30 minutes and serve.
