This is a great Thanksgiving Brunch meal. You make it the day before, then stick it in the fridge overnight. Thros it in the oven in the morning while you dress the turkey. Most french toast casserole recipes call for day old french bread, but this one is my favorite. I came up with it when I had to creatively get rid of an entire package of cinnamon raisin bagels before they met their expiration date. My whole family is very picky, but they all loved it!
French Toast Casserole
You will need:
1 package of your favorite cinnamon-raisin bagels (large or mini)
3 cups milk
2 tsp. vanilla
6 Tbsp. softened butter
1/2 cup brown sugar
To make the casserole:
Step 1. Grease a 13×9 baking dish. (I use Pam)
Step 2. Cut the bagels into bite size chunks and put them in the baking dish.
Step 3. In a large bowl, whisk together the eggs, milk, and vanilla.
Step 4. Pour the egg mixture over the bagels.
Step 5. Cover with plastic wrap and refrigerate overnight.
Step 6. (The next morning) Preheat the oven to 350 degrees.
Step 7. Remove the plastic wrap and bake the casserole for 45 minutes.
Step 8. When the casserole is almost done baking, mix the softened butter and brown sugar together in a small bowl.
Step 9. Brush / spread the butter and sugar mixture over the hot casserole and return it to the oven for 5 more minutes.
Step 10. Let the casserole sit for 5 minutes before eating. Enjoy!
You may also use regular bagels; just be sure to add a tablespoon of cinnamon to the egg and milk mixture.
