What are your plans for Thanksgiving? Are you traveling to visit relatives, or are you the one who will be hosting the family dinner? If you are in the hot seat this year, you have nothing to fear. Besides the turkey and dressing, the most important part of the meal is dessert. If you are short on ideas, I have the perfect solution. These recipes are true winners! The first one is a peanut butter pie, and it is incredible! Not only is it very simple to make, but it always get rave reviews when I make it.
No-Bake Peanut Butter Pie
For the crust, you will need:
1 package Nutter Butter Sandwich Cookies
5 Tbsp. butter, melted
Put the cookies into a heavy duty Ziploc bag, seal it, and break them into crumbs. I like to break them up with a hammer and finish them off with a rolling pin. Mix them with the butter, and press them into two 9 inch deep-dish pie pans.
For the filling, you will need:
8 oz. cream cheese
1 ½ cup confectioners’ sugar
1 cup peanut butter
½ cup milk
16 oz. frozen whipped topping, thawed
For the topping, you will need:
Miniature peanut butter cup candies
Beat together all of the filling ingredients until smooth. Pour them into the crusts. Now take your peanut butter cup candies and place them around the edge of your pie. Cover the pies and freeze them until firm.
The second recipe is for Hummingbird Cake. The first time I had this cake was when my mother-in-law made it for Thanksgiving dinner . This recipe, you may notice, does not include vegetable oil like many cake recipes. Oil can be replaced with the same amount of applesauce. This eliminates the fat, while keeping all the flavor and moisture. The beauty of this cake is the many flavors it has wrapped up inside it. I made it for Thanksgiving two years ago, and it was gone very quickly.
For the cake, you will need:
3 cups all-purpose flour
2 cups white sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 ½ cups applesauce
1 ½ tsp. vanilla
8 oz. can crushed pineapples, drained
1 ½ cup chopped walnuts
2 cups diced bananas
For the frosting, you will need:
8 oz. cream cheese, softened
½ cup butter
4 cups confectioners’ sugar
1 tsp. vanilla
Mix together the flour, white sugar, baking soda, salt, and cinnamon until they are thoroughly blended. Add eggs and oil to the dry ingredients, and mix with a large spoon until they are moistened. Stir in 1 ½ tsp. vanilla, pineapple, nuts, and bananas.
Grease and flour three 9-inch cake pans. Bake at 350 degrees F for 25-30 minutes until the cake is done.
Now it is time to make the frosting. Combine the cream cheese and butter, and cream together till they are smooth. Add the confectioners’ sugar, and beat until it is the consistency you desire. Stir in 1 tsp. vanilla. When the cake is cooled, it is ready to frost.
