The World’s Best (and Easiest) Butter Cookie Recipe

This simple recipe is a very easy way to make some incredibly delicious butter cookies. I have been asked year after year by so many people to make these at holiday time. Try them and you will see why!

Ingredients:

1 pound (4 sticks) butter or margarine, divided (do not use vegetable oil spreads)
2 3/4 cups (11 ounces) flour
1 (18.25 ounce) box white cake mix

Preparation:

Heat oven to 350 degrees F.

In small bowl, microwave 2 sticks of the butter on HIGH 1 minute or until melted. Using a knife, slice remaining butter into 1/2-inch pieces; add to melted butter, tossing to coat. Allow butter to stand 3-5 minutes or until softened.

Add cake mix to flour and blend well using a whisk to break up any large lumps.

Using a whisk, whisk butter until smooth and free of lumps. If necessary, return butter to microwave for 10 to 20 seconds or until creamy and pourable. DO NOT melt completely. Pour butter, all at once, into dry ingredients; thoroughly scrape butter from bowl using a scraper. Using a spoon, mix until dry ingredients are incorporated and dough is smooth. (If dough is too stiff to stir, knead until smooth by hand on a board.) Shape dough, bake and decorate as desired.

Bake the cookies for about 8 minutes, watching to get them just as they begin to turn amber, but not brown. Let them cool on the pan for a bit before removing. Enjoy these melt in your mouth delights!

Try some other variations by adding spices or flavorings, using different cake mixes or shaping your cookies so you can add pie filling and cream cheese!
