Preheat oven to 350Â°
First prepare the crust.
Spray a 10″ pie pan with cooking spray.
2 cups old fashioned oatmeal, uncooked
3 heaping tablespoons light brown sugar
3 tablespoons melted butter
Â¼ cup coarsely chopped walnuts
Using a tablespoon spoon press mixture into the pie plate, pressing mixture up the sides. The mixture will be loose and crumbly. Place in the oven at 350Â° for 15 minutes.
After removing pie shell from oven increase temperature to 425Â°.
1 15 ounce can pure pumpkin
Â¼ cup sugar
Â¼ teaspoon salt
1 teaspoon cinnamon
Â¼ teaspoon ginger
1 14 ounce can sweetened condensed milk
2 large eggs slightly beaten
Mix well and pour into prepared pie shell.
Place pie in oven set at 425Â° for 15 minutes, then reduce temperature to 350Â° for 30 minutes or until a knife inserted into pie comes out clean.
Garnish pie with walnuts, sprinkle top with additional ground walnut if desired.
Serve topped with whipped cream.
