This soup is an easy and delicious way to get your vegetables. It mostly made up of potatoes and a blend of low carbohydrate vegetables and is made as follows:
2 large russet potatoes cut into ½ inch pieces (3 cups)
1 medium rutabaga or sweet potato, peeled and cut into 3/4 inch pieces (2 cups)
3 medium stalks of celery, cut into ½ inch slices (1 ½ cups)
1 large onion, coarsely chopped (1 cup)
4 cups of water
4 teaspoons of vegetable bouillon granules
2 cups of any frozen vegetables (such as broccoli, cauliflower, and carrots)
1 can (10 1/4 ounces) of condensed Cheddar cheese soup
1 cup of milk
1 teaspoon of dried dill weed
2 cups of shredded Colby or Cheddar cheese (8 ounces)
Freshly ground pepper, if desired
Mix potatoes, rutabaga or sweet potato, celery, onion, water and bouillon granules in a 4-to-5 quart Crock Pot (slow cooker). Cover and cook on low heat setting for about 8 hours or until vegetables are tender. Next, rinse the frozen vegetables in cold water to separate them and drain. Stir the vegetables, soup, milk and dill weed into the mixture in the slow cooker. Cover and cook for 1 hour on high heat setting or until vegetables are tender and chowder is hot. Sprinkle with cheese and pepper. This soup serves 6 people.
This recipe is from the Betty Crocker Favorite Casseroles with Bonus Crock-Pot Recipes, published in September 1999 by General Mills, Inc. Each serving has 340 calories, with 160 calories from fat; a small, but high-fat protein, portion; and a wide range of low-carbohydrate vegetables, except the potatoes. To make sure the carbohydrate count was minimal I followed the suggestion of using broccoli, cauliflower and carrots for the frozen vegetable blend. Each serving has 32 grams of carbohydrates. I cooked the low-heat segment for 8 hours and the high-heat segment for 1 hour and got the desired results, and I picked the sweet potato and Colby cheese options. I also added the fresh ground pepper. However, the publication says preparation time is ten minutes. I guess I don’t chop that fast; it took me about an hour.
