I love green peppers! Being a vegetarian I needed to be creative to make stuffed green peppers. So hold onto your ground beef because you won’t be using it in this recipe. Instead we will be incorporating black beans, rice, Havarti cheese and an unlikely seasoning, Hungarian Paprika. This is a very satisfying rendition of stuffed green peppers. I hope you enjoy reading about it enough that you will try it.
1 tsp salt
2 Tbls. Hungarian Paprika
3 thin deli slices of Havarti cheese
1 15 oz can of tomato sauce
1 15 oz can of black beans, rinsed and drained
4 green peppers
2 cups rice
Follow your usual directions for cooking 2 cups of the rice of your choice. While the rice is cooking you can top the green peppers and clean the seeds from the inside. After the rice is done, combine in a bowl with the black beans and half of the tomato sauce. Stir in the salt and paprika. Hungarian paprika can be very spicy, so please alter the amount for your personal taste. Fill the green peppers with your mixture layering in the cheese several times. Always put a layer of cheese on the top. In a glass baking dish set the green peppers upright. Pour the rest of the tomato sauce over the peppers. Bake them in a 350 degree oven for 60 minutes or until the peppers are soft.
