It’s the end of the week and the fridge and pantry are running low, here are some ideas on what to make with your last few ingredients.
Goulash is a great way to mix together ground beef and just a few other ingredients to make a great meal. One super easy and cheap way to make goulash that my family loves is by combing ground beef, diced tomatoes, and elbow macaroni.
Start by browning 1lb of ground beef and boiling about 2 cups of macaroni. Drain them both and put them in a pot. Add a can or two of diced tomatoes, some salt and pepper, bring it to a boil and then simmer for about 20 minutes and it’s done!
If you have a few more ingredients to spare try adding a little onion, garlic, or a can of vegatables (with the juice) to the pot. A little bit of chicken stock will make this recipe taste like it has been simmering all day. Serve with cornbread for a hearty family meal.
If you don’t keep elbow macaroni on hand, just use a box of mac and cheese and put the cheese packet away to use later. It can make your next recipe extra cheesy! I’ve even made this recipe without the ground beef. Macaroni and Tomatoes make a great lunch!
