Tired of the same-o same-o pumpkin pie every year? Looking for something a little different for your holiday menu or something yummy to take to that potluck at work, then you have to try this pumpkin cake! It’s a no fail at holiday parties and potlucks. Your family, friends and co-workers are sure to ask if they can get the recipe.
Yellow Crumb Pumpkin Cake
6 Eggs (beaten)
1/2c brown sugar
1 can evaporated milk
1 large can pumpkin
1/2t pumpkin pie spice
1 box yellow cake mix
1 stick butter (softened)
1/2c chopped nuts (your choice)
Pre-heat oven to 400o. Step 1: Combine all ingredients in a large mixing bowl. Step 2: In a seperate bowl, cut 1 stick of softened butter into 1 pkg yellow cake mix and mix in nuts. Sprinkle half of the step two mixture on the bottom of a 13″x9″ baking dish. Then pour step one mixture over the top. Place in oven for 10-12min., then remove from oven. Lower oven temp to 325o. Sprinkle remaining step 2 mixture over hot pumpkin mix in baking dish, and return to 325o oven for 50-60 min. Remove from oven allow to cool and set for 30 min.. Serve with whipped cream and butter pecan ice cream. YUM! YUM!
